Cucumber Lime Mint Mules

Happy Friday!



Time to kick back, put your feet up and enjoy the 3 day weekend! The best way (or only way really) to do that is with a cocktail in your hand and the sun in your face.


What are you waiting for? I’m going to keep it short today so that you can run off and enjoy your holiday right away!


Cucumber Lime Mint Mules                                                                              serves 4-6 

Ingredients

  • Β½ a medium cucumber
  • ΒΌ cup mint leaves plus extra to serve
  • ΒΌ cup fresh lime juice (the juice of about 5 limes)
  • 4 ounces gin
  • 250ml tonic water
  • some ice to serve

Method

Combine the cucumber, mint and lime juice in a blender and pulse until you have a green slush. Add ice to the bottom of each glass. Divide the cucumber lime mint mixture equally between serving glasses, alternatively you could add all of it to a large pitcher. Top each glass with an ounce of gin (or a shot, more if it’s been a long week) and fill to the top with tonic water. Add some mint to decorate and serve! Enjoy!
