- ½ a medium cucumber
- ¼ cup mint leaves plus extra to serve
- ¼ cup fresh lime juice (the juice of about 5 limes)
- 4 ounces gin
- 250ml tonic water
- some ice to serve
Combine the cucumber, mint and lime juice in a blender and pulse until you have a green slush. Add ice to the bottom of each glass. Divide the cucumber lime mint mixture equally between serving glasses, alternatively you could add all of it to a large pitcher. Top each glass with an ounce of gin (or a shot, more if it’s been a long week) and fill to the top with tonic water. Add some mint to decorate and serve! Enjoy!
